George Town, 12 Mac – KDU College Penang (KDU College) culinary students have once again triumphed at the Battle of the Halal Chefs 2015.

Organised by Halal Penang, the 2nd Battle of the Halal Chefs was held in conjunction with the 6th Penang International Halal Expo and Conference (PIHEC) at Spice Arena Penang from 30 January to 1 February 2015.

A team of approximately 50 KDU students from the IMI Diploma in Professional Chef Training programme proved their mettle, competing against amateur and professional chefs from different parts of the world. In total, the KDU team took home one (1) Gold medal, seven (7) Silver medals, 12 Bronze medals and 7 Diplomas.

Chef Muhamad Faizal Bin Ab Rasid and Chef Chuah Lay Yen, lecturers of KDU College and trainers for this competition, were thrilled with their students’ achievements. Commenting on the wins, Chef Faizal said, “Competitions like this expose students to new ideas and help improve their creativity. Under the stressful environment of a competition, students have to be quick on their feet, especially when it comes to selecting ingredients and planning their dishes. This becomes even more challenging in the case of Halal food preparation, where it is important to know how to substitute ingredients without losing flavour.”

Chef Chuah said, “KDU students are taught to experiment and explore in the kitchens. Competitions, especially those held on an international scale, broaden the students’ mind-set and build character.”

Cindy Loh, Academic Department Head for KDU College’s School of Hospitality, Tourism and Culinary Arts, congratulated KDU’s team on this achievement and said, “The IMI in Professional Chef Training programme at KDU College offers the ideal platform to nurture students’ passion in the culinary arts. At KDU College, students are trained in state-of-the-art facilities and exposed to global developments and real-world experiences through many avenues, such as internships, simulations and competitions.”

Meanwhile, KDU College lecturer Chef Mohd Ridzuan was invited to be one of the keynote speakers at the Georgetown’s Artisanal Heritage Forum organised in conjunction with PIHEC. He highlighted, “The world Halal market is growing exponentially, and, according to a report commissioned by the Dubai Chamber of Commerce, it will be worth US$1.6 trillion by 2018. This is a great opportunity for chefs who are well-versed in Halal cooking techniques, as they will be able to adapt Halal requirements to any global cuisine. At KDU, our culinary students are well prepared to meet this demand.”
